Indigo at One Aldwych overlooks our buzzing Lobby Bar and out onto the crowds of Covent Garden’s famous theatres, light-flooded, mezzanine-level Indigo is trailblazing London’s culinary creativity. Executive Chef Dominic Teague reimagines British cuisine in exceptional dishes which bridge tradition and gentle innovation. Respecting the sustainability incentives of the hotel, Dominic has discreetly cut dairy and gluten from his lunch and dinner menus, and diners haven’t been able to tell the difference.
At Indigo, the finest ingredients from across the Isles take centre stage. Each plate showcases foraged foods and seasonal ingredients: Isle of Wight asparagus and seared Orkney scallops; mackerel cured with London gin; Rhug Estate lamb and Merryfield Farm duck; Valrhona mousse and seasonal pavlova.
